Reflecting on 2013

Sitting on my couch, watching Dick Clark's New Year's Rockin Eve while my hubby sleeps, my son watches tv and my daughter watches her new fish.  At 11:50 we'll all gather in the living room to countdown the new year but for now I sit here and think.  Thinking about this year that is coming to a close - can't believe its almost over and can't believe how fast its gone.  So much has happened that I'm still shocked it all happened in 1 year.
I started the year at a new job, got into a minor car accident in February, my son has a good year playing baseball at his school, my daughter has a great year in dance and school, my son ends up failing Freshman year so I transfer him to public school (not happy about this move), still struggling with money, my hubby's car gets destroyed while it was parked outside my job(2nd car accident), more good times pass, we have to cancel our Disney vacation (again), my mom has a heart attack(fully recovers, Thank God) and our dog suddenly dies this past Sunday.  Very sad end to a crappy year......I may even cry before the night is over but I will look forward to the future.

  • I will keep my head held high
  • I will remind myself of all the good things in our lives: us(our little family), our good health, our unity, we are happy no matter what
  • I will continue to motivate my kids to go out and take advantage of every opportunity they have
  • I will look forward to the unknown, a new year, new beginnings, more changes
  • We have goals and dreams that we hope to get working on this year
We accept whatever comes our way and we will move on the best way we can.  We will continue to trust in God and know that everything he has placed in our path is for a reason......He would never lead us down the wrong path.

So, we will keep it very low key tonight - just us and that is ok!  Yes, it would've been fun to welcome the New Year celebrating with friends and/or the rest of the family but it just isn't that kind of year.  We will end the year together, just the 4 of us, at home, happy, warm & comfy!

Straight from my comfy couch I wish you all a wonderful, happy, healthy & prosperous New Year!!!

Christmas Day with Little Sleep!!

6:15AM and my alarm is going off.....not my regular alarm, no, no, no.....its the alarm that NEVER works when I need it to wake me up for work, but it worked today!!!
So, since I had to get out of bed to shut it off and hubby woke up too we decided to just wake up the kids!  Santa left baby girl a singing Olaf doll so we walked in her room with it to wake her up but as soon as we opened her door - she was up!!! LOL!!
Then we got up our big boy who hates waking up early in the morning, but he wasn't too bad this morning.
Now, one thing I forgot to mention is that Santa's delivery was a bit different this year.  Usually Santa leaves all the presents out & unwrapped, ready for the kids to play with.  But this year, he decided to make them work a little bit so he left his toy bags behind - one for each and personalized....they were awesome!!! Both bags were full of gifts!

So this wonderful day has come to an end!  Best part was seeing my children opening up all of their gifts and seeing them so happy!! I am truly blessed - this really turned out to be a nice low key day with my little family!
Hope every single one of you had a wonderful day with your loved ones as well!!
Cherish all of the memories!!
Merry Christmas!!!

I Love Christmas!!!!

So it is finally Christmas and I'm ecstatic!!! Even though it lands in the middle of the week this year and I have to work the day before and 2 days after....stinks!! Altough, I am thankful for having a job this year.....last year I was unemployed with no luck in finding work! So....working on Christmas Eve meant I had to start cooking on the 23rd!
Our traditional meal is pernil (roasted pork shoulder) black beans, white rice and yucca(cassava).  Most of this can be done in less than 2 hours but the pork takes 5-6 hours of cooking in the oven, therefore I had to get started on this a few days before.  On Sunday I marinated it so it could start sucking up all the juices and flavor! Then on the 23rd, when I got home from work, I set my oven to 250 and put the pork in to start cooking.  It was done by 1:30AM.....I finally went to bed by 2AM and then was up at 6AM to get ready for work.  I was exhausted but I had to get moving!!
I got to work, did what I had to do and fortunately we were able to leave early....now I was excited.  I got home as soon as I could and got cooking!!
Here is the result:

We bought these from a local Cuban Bakery

This side were all the sweet treats!
Now our Christmas Eve tradition is to open each other's gifts and then Christmas Day the gifts from Santa are opened.  So let the gift giving begin:

Then it was time to make Santa's cookies

Well, everything is finished and we are ready for Santa's arrival!! Kids are off to bed & I patiently wait for the right time for Santa to leave his gifts!

The time finally came & I'm off to bed...............

December Fun!!

This has been one crazy month - I'm ending the year just the way its been all year...busy, busy, busy.  I'm still trying to get a grip on my schedule and make time for everything I have or want to do.  In between all the work, Christmas shopping, cooking, homework, baseball and dance practices I did manage to make time for some fun and memorable activities.  In the last 2 months we've gone apple & pumpkin picking and took a short trip to Hershey Park, so I definitely wanted to add something fun this month!  We always try to take a trip to NYC during this time to see the tree, but since my daughter LOVES dance and now has a sudden interest in going to see musicals and plays, I got us tickets to the Christmas Spectacular at Rockefellar Center.

I used a coupon I picked up at a McDonalds one day and bought our tickets for a decent price.  I chose a Monday, so both hubby and I took the day off from work and I kept the kids home from school.  We jumped on the bus, to save money on the parking and toll, and made our way to NYC at 9am! I have to admit we all had fun and the show was great!!!

Walked by the tree, stopped in some stores including American Girl Place

Disney Store is absolutely beautiful!!! Love it!

These guys weren't great but baby girl wanted to stop - then I was shocked when they asked for tips!! I never knew they asked for tips!!

This totally made her day!!

 Last stop - Toys R Us.....WOW!!!

This was a great day!! A few days later, baby girl had her Christmas concert and she did a wonderful job!

Now its time for Christmas.......next post you'll read all about our little Christmas celebration at home and our little elf's appearances!

Wordless Wednesday Challenge - Favorite Disney Sidekicks
