New Recipe Flop!

Hey!! So, how many of you thought it was Monday?  Well, if you had the day off yesterday, chances are you spent the day checking your calendar...LOL!  I don't even work, I'm home all day but since my kids were home yesterday I'm all confused today.  LOL, yea it doesn't take much these days!

Anyway, today I attempted a new recipe that I got off the Chew's website.  It was for meatloaf, which I have never attempted to make but since I'm always looking for something new, I decided to give it a try.  I already had all the ingredients, so why not!  All the mixing went great, I even laid it out according to the directions....

I added the cheese in the middle......

then folded it over and placed it in the pan, but it was too big for the loaf pan, so I used my square cake pan....

This may have been where I went wrong because as it cooked, it fell apart.  I didn't even bother to take a picture, it was a mess!  It tasted ok, a little too oniony (I know that's not even a word) for my taste and I may not make it again.  It was too much work, I'd rather make picadillo or meatballs with the meat.  Since I'm dieting, I didn't make a side to go with it.  I just poured a tablespoon of Giada's Marinara sauce over a piece of it and I had a little bit for dinner.  I couldn't even finish it, not sure why, I just wasn't in the mood to eat a lot of it.

My lunch and snack were good, though.  Lunch was Smart Ones three cheese ziti and my snack was celery and baby carrots with hummus.

I also rewarded myself with a glass of Pinot Grigio and I'm so happy to say that after logging in all my food on My Fitness Pal, I was under my calories.  I still had over 200 calories to go....thanks to my walking for an hour earlier today.  I'm really hoping to see a loss of weight on the scale tomorrow.

As for the rest of the week, I have no idea what I'm making but here are some ideas:

Wed: Chicken - grilled with baked potato or rice
Thurs: Taco Salad/Picadillo with rice
Fri: Grilled pork chops with rice/salad
Sat: pasta with chicken or meatballs
Sun: take-out

This is my guide for the rest of the week- I may change it around, but this is what I'm thinking for the week!

Great weekend-not ready for the Week!

So its Monday night and I'm feeling like its Sunday....why does this happen to me? This weekend flew and it was a good one! Saturday was pretty easy going. We went out early in the afternoon to take our son to hitting practice, then headed to Olive Garden for an early dinner. Unfortunately, there was a 45 minute wait and we were starving since we skipped lunch, so we left. Then we thought of going to Chili's and luckily there was no wait....this one wasn't our first choice but it was better than nothing.

Sunday was a bit crazier. First up was ice skating and it was fantastic! Baby girl passed her test and is moving to basic 2!! This was the child that cried her eyes out on the first day saying that she never wanted to go back, lol! Needless to say she was ecstatic and wanted to tell everyone. After ice skating we headed to my sister-in-law's for our niece's birthday party. It was a small lunch at The Cabin Restaurant in Freehold. On the menu was thin crust pizza, boneless wings & of course birthday cake! The girls had a blast and as for us adults, yeah it was fun too. I loved the decor in the room....Yankee pictures & jerseys on every wall. There was also a flat screen tv, although they had it tuned to a tennis game so I wasn't really watching. This would be a great place to come have a few drinks & watch a game or just hang with friends. We were told that they also host bike nights during the summer, which is fun for those interested. We've gone to a few bike events in the past and they've been fun! Afterward we went to m sister-in-law's house so hubby can cut down a piece of a tree that has been hanging over her fence and into her property. This took some time, which in turn didn't give us enough time to get back to take our son to his open gym session at school. We always try to not miss the kids' activities but sometimes it's unavoidable.

This morning I woke up feeling horrible & with a stiff neck. So after a quick trip to the mall, I spent the rest of the day in bed. I even missed baby girl's gymnastics. Hubby had to take her today & I felt so bad because I never miss her gymnastics but I am in no condition to drive or go anywhere today. I hope to wake up better tomorrow!

Saturday, January 19, 2013 a good way :)

So its been about 2 weeks that I've begun watching what I eat and counting calories and so far I've lost 4 pounds.  I'm so happy, I'm actually seeing results!!  I've been using 2 apps to help me keep track of everything I eat.  The first one is Lose It! and the other is My Fitness Pal.....I have both on my Ipad.  I've had both for a while but in the last 2 weeks I've been really good about logging everything in.  I think this is what has helped me stay on track.
I know its only been 2 weeks but I'm so happy to see some weight come off.  The walking on the treadmill has also begun and I'm hoping to be running again real soon.  The soreness is terrible right now, but its nothing that will stop me.  Even my hubby is losing weight so all is good right now.
We decided to take a small break off the diet today, so we went to eat dinner at Chili's.  All I had was breakfast so my dinner was actually lunch and dinner(not good, I know).  I ordered the Bacon Ranch Quesadillas with a side of Mashed Potatoes with gravy.  Normally I would've eaten everything but today I just couldn't.  I was stuffed with only 1/2 of the quesadilla order and 1/2 the mashed potato.  My calorie count was still over but it wasn't as bad as it would have been had I eaten everything.
Tomorrow will be a bit of a challenge since we have a birthday lunch to attend, so my plan right now is to keep my breakfast very low calorie, and hope there is something healthy at this restaurant.  Guess I will find out tomorrow!

Back to the Drawing Board!!!

Ugh, I have started so many things over that it feels like I'll never finish anything.....but I will, I just know it!!

First-diet!! That dreadful word-DIET-I hate it, but since I'm starting over I'm also taking a different approach.  First, I am watching my calorie & carb intake, plus I'm open to trying new foods this year.  There are so many recipes out there that are delicious but also healthy and low in calories.  Watching The Chew on ABC has been one of the many shows that has inspired me to cook new meals.  I've also gone back to look through my collection of cookbooks.  Instead of picking out things I would eat, I'm just trying a new recipe once a week.  So far I've like what I've made and so has the family so those are keepers :)

I'm also starting over on my running.  I have not even looked at my treadmill in over 2 months and its shocking how awful I feel when I get back on.  Everything is sore!!  I am determined to start! Since its Friday, I have my walk scheduled to begin on Monday.  The plan is to turn my "walk" into a "jog" and eventually run!

And finally, the one I'm most heartbroken about....Disney vacation :( Yes, I'm starting my Disney vacation planning again.  The April trip I wrote about in my Third Times a Charm~I Hope post has to be cancelled.  My son has a very unpredictable schedule & I've been informed by a friend, who shall not be named (you know who you are, LOL) that baseball will have started that week! Therefore, my son cannot go anywhere and I'm not going on a family vacation without him! So now, I think we are doing a group of friends Disney trip in December-New Year's Eve week!  So at this point, I'm taking this December vacation until further notice!

Keeping my fingers crossed & hoping for the best in this new year!!!

Disney time really is magical~anywhere you have Disney time!  Since we are not sure when our next Disney trip will be, I finally got tickets to take my little princess to see Disney on Ice.  The time here was amazing, fun, entertaining, beautiful and Magical!!

Resolutions.....Not for Me!!

We are over a week into the new year and I keep hearing and reading all about resolutions.  Well, I have decided that I'm not going to make any.  Nope!  Why should I?  I'll probably just break within a month, or sooner.  What I am going to do is continue on my weight loss journey, job search and trying to organize my life!  I feel that making resolutions will just set you up for failure.  I remember when I had a gym membership, the month of January was the worst!  Then February rolls around and all of a sudden the hundreds of people you got used to seeing are gone!  It's crazy!!

So now with my continuation of my goals.....first weight loss.  Both my hubby and I are back on the dieting.  This is our third day and this is the day where I usually break my diet-especially when I'm on low carb.  I feel weak and tired, must be from the reduced carb intake, but since I am not working, I'm able to take an afternoon break.  I'm really hoping to stick this out for the full two weeks, hope to lose about 10 lbs, and then gradually add healthy carbs back to my diet.  My goal is to lose 50 lbs this year.  When you first go on these low carb diets, you tend to lose a lot the first 2 weeks, so I'm hoping for the max of 10 lbs.  By the end of the first week, I'm hoping to have a bit more energy so exercising won't feel like such a chore.  I plan on walking today, unfortunately I need to start from scratch-AGAIN!  Everytime I think about how I used to run 2 miles in 30 minutes and now I'll be lucky if I can do 15 minutes, I get really upset with myself.  The worst thing I've ever done is not fit in a run daily.....I let the laziness take over! Bad, bad, bad!!!  So today the plan is to just walk for as long as I can.  I'm tired just thinking about it...LOL!

Next on my list of goals is better organization.  This I hope to perfect before I find a full-time job.  We have so much going on and I'm the only one who keeps a schedule-which is usually on my phone or ipad.  When I return to work, my hubby needs to know whats going on and I can't rely on my remembering to tell him.  So, that's where this idea came from:

I was at Walmart and since I love office supplies, I strolled down that isle and found these Quartet boards.  There were many to choose from, but I liked the black one with the blank calendar and the pink board has a spit on the side to pin notes.  Plus they are both magnetic, so besides being able to write on them, I can also use magnets to hold more notes or letters on it if I needed to.  I already filled in all of January's activities and appts on the calendar, and on top I have put 2 dates that we need to remember not to make plans on.  I placed these in my kitchen where everyone will see them, so no more excuses about not knowing they had something to do.  I'm hoping it works as well as I'm imagining it will work.

I also found out about this app for Ipad - Motivated Moms 2013.  So far its been great!  Its a daily checklist of things you should do daily, and everyday you have some additional things to do around the house.  You can customize it, and it definitely has helped me with cleaning my house.  I used to overwhelm myself by trying to clean the entire house once a week.....yeah! That NEVER happened and I'd go to bed feeling like a train wreck!  Now all of my tasks are broken down throughout the week.  Yesterday I cleaned bathroom mirrors, dust and today I have to work on my closet, clean kids' rooms,  plus all the daily tasks like feeding pets, sweeping kitchen, cleaning out my sink and much more.  It feels like I'm able to do more, keep my home looking cleaner and neater without being totally exhausted by the end of the night.

So I've taken care of weight loss and organization, now for the job search.  I'm still looking!  I apply to different job openings daily, went on 1 interview earlier this week but nothing yet!  It'll come, maybe what I've applied for and interviewed for have not been what was intended for me.....the right opportunity will come!  I have to remind myself everyday to keep the Faith....everything will work out!!
