New Recipe Flop!

Hey!! So, how many of you thought it was Monday?  Well, if you had the day off yesterday, chances are you spent the day checking your calendar...LOL!  I don't even work, I'm home all day but since my kids were home yesterday I'm all confused today.  LOL, yea it doesn't take much these days!

Anyway, today I attempted a new recipe that I got off the Chew's website.  It was for meatloaf, which I have never attempted to make but since I'm always looking for something new, I decided to give it a try.  I already had all the ingredients, so why not!  All the mixing went great, I even laid it out according to the directions....

I added the cheese in the middle......

then folded it over and placed it in the pan, but it was too big for the loaf pan, so I used my square cake pan....

This may have been where I went wrong because as it cooked, it fell apart.  I didn't even bother to take a picture, it was a mess!  It tasted ok, a little too oniony (I know that's not even a word) for my taste and I may not make it again.  It was too much work, I'd rather make picadillo or meatballs with the meat.  Since I'm dieting, I didn't make a side to go with it.  I just poured a tablespoon of Giada's Marinara sauce over a piece of it and I had a little bit for dinner.  I couldn't even finish it, not sure why, I just wasn't in the mood to eat a lot of it.

My lunch and snack were good, though.  Lunch was Smart Ones three cheese ziti and my snack was celery and baby carrots with hummus.

I also rewarded myself with a glass of Pinot Grigio and I'm so happy to say that after logging in all my food on My Fitness Pal, I was under my calories.  I still had over 200 calories to go....thanks to my walking for an hour earlier today.  I'm really hoping to see a loss of weight on the scale tomorrow.

As for the rest of the week, I have no idea what I'm making but here are some ideas:

Wed: Chicken - grilled with baked potato or rice
Thurs: Taco Salad/Picadillo with rice
Fri: Grilled pork chops with rice/salad
Sat: pasta with chicken or meatballs
Sun: take-out

This is my guide for the rest of the week- I may change it around, but this is what I'm thinking for the week!
