2013 Cookbook Challenge - Book #1 - Recipe #1

So its Sunday night and I'm ready to pass out :) Yes, its that time!  We've had a very busy weekend, between baseball games we've had Communion shopping, baseball stuff shopping, groceries, housework and I finally squeezed some cooking today.  My cookbooks are sitting on my kitchen table-in my way everyday so it was definitely time to start making some new recipes from these books.
I started with The Best Slow Cooker Cookbook Ever:
I've had this book for years and never used it!  I bought a new crockpot a few months ago and only used it twice because I don't know what to make in it.  Then I realized that I have this book - time to use it!!
My son and hubby love ribs, so when I found a recipe for Barbecued Country Style Ribs, I knew this had to be my first selection.

 It was a fairly easy recipe! I baked the ribs for 30 minutes in the oven, then put them in the slow cooker for 7 hours!

 Finally it was done, I made some rice and beans to serve with it and it was good.  My kids ate it too, although my son made it a point to say that it didn't taste like Disney's ribs from the Aloha Dinner Show :/  Yea-well, they weren't supposed to taste like those-unbelievable!

Now that I know we all enjoyed this meal, I marked it in my book as OK, so I know to make it again!
Now to find a new recipe.......

Monday-lots of Planning & New Challenge

Good morning everyone!! Hope you all had a great wekend.  Ours wasn't too bad.  My daughter performed in her dance school's first Spring concert, so it was busy but fun all at the same time.  I will write about that in another post.
Today is Monday and I would try to have a menu plan for the week, but I don't.  With everything we've had to do this weekend, I didn't have time to even think about it.  When I was on the laptop, I was trying to blog hop for the Ultimate Blog Party.  I love participating in this since its a great way to meet new people and discover great blogs!  While I was looking around, I remembered that I wanted to join Cook, Clean, Craft's Great 2013 Cookbook Challenge.  I'm a bit late in joining....but better late than never, right!

I love looking up recipes and buying cookbooks, but I tend to flip through them and put them away and forget about them.  The result?  A pile of books and papers taking up space and collecting dirt.

This doesn't include another stack of food magazines that I need to dig out of the closet!  Here is the challenge as stated on Cook, Clean, Crafts : Must cook at least 3 recipes from them and like the  meals. The deadline for this challenge is the end of the year......so its time to get cooking!!!

Our Tooth Fairy is Losing Her Mind!!!

Yes, our tooth fairy (me) is nuts and she’s losing her mind!! I mean, really, who forgets that their child has lost a tooth and is expecting to wake up to a surprise from the tooth fairy?  Well, it seems that I’m that person. 

My daughter lost her tooth Monday while in school and she put her tooth in a zip lock back-stapled it up & everything, and was super excited.  She placed it under her pillow pet, which she sleeps on, and went to bed.  So you can imagine the disappointment when she woke up the next morning to only see that her tooth was still there & no money!  My poor baby-I felt horrible, but blamed it on the fact that she sleeps with 3 pillows and had placed it under the top pillow-which is her pillow pet!  I told her she had to place it under the bottom pillow-so she bought the story & agreed!

Now it’s Tuesday night!  After an incident with our cat and her crying – I felt bad so I let her sleep with me.  She brings the tooth and places it under my pillow-I go right to bed with her.  This morning I get up, go about my business getting ready for work and after 30 minutes I go wake her up.  Oh boy!! All I hear from my room is “Dang it!!! The tooth fairy didn’t come! L What in the world is wrong with me-I’m a terrible mom!!  So, I tell her she probably didn’t come because she wasn’t in her own bed last night, but we couldn’t cry about it now, we had to get ready for school and leave!  At this point, I’m really feeling horrible about this-how can I forget 2 nights in a row??? 

So I start making my bed & decide to put $2 under my hubby’s pillow-which she hadn’t looked under, and I poked a small hole through the zip lock bag & took the tooth out!  I put the bag on my night stand since I was making the bed.  I then went by my hubby’s side of the bed, pretending to be fluffing his pillow & call out to her!!  Acting very surprised, I say “Look what was under daddy’s pillow?”  Oh joy!! The frown turned upside down in an instant!!  She did come by-but why didn’t she take the tooth?  Now I tell her “well, are you sure the tooth is in the bag?”  So she goes running to my side of the bed to check it out & now she’s screaming “It’s magic!! The tooth is gone & the bag is still stapled shut!!”  My quick thinking worked even better than I imagined since she didn’t notice the hole I poked in the bag….LOL!!  I was so relieved and happy that I was able to cheer her up.  I certainly didn’t want her going to school thinking that the tooth fairy had forgotten her!

I really feel like I’m losing my mind-I was never like this!

Time for a Blog Party!!!

Welcome to my blog!! This is the second time I join the Ultimate Blog Party.  I loved being part of it last year, so I’m back for more.
I’m so happy you stopped by my little crazy place full of family stories, plans, thoughts and lots of talk about random products and topics.  I am an obsessed Disney fanatic, but I mostly talk about my life with my hubby and kids.  I started this blog in January of 2011, as something to do since I was unemployed.  It kept my mind busy and I thought would help my writing skills.  After 2 years – I’m still here.  I don’t post as much as I’d like but I really try to get a post at least once a week.
I’ve been married to my high school sweetheart for 17 years – this June will be 18!  We’ve had great times and bad times, but it’s just brought us closer.  We have 2 wonderful, pain in the butt children who really keep us going.  Our schedules, no, our LIVES revolve around them…..LOL!  We plan vacations and short car trips or getaways around their schedule.  My son is 14 and plays both high school and travel baseball.  He’s been playing since he was 4 and loves it!  My daughter is 7, but equally as busy since she takes dance, gymnastics and ice skating.  Actually, she finished gymnastics for the year – we decided she’s too busy with dance right now so gymnastics may start up again in September.  Ice skating is also coming to an end for a while.  We are concentrating on dance this Spring since there is a lot going on, which I will be writing about in the coming weeks.
So this is pretty much it – I live to enjoy my family and life and I really try to enjoy everyday of my life.  Life can be difficult and we all encounter rough patches, but you need to always look for the light at the end of the tunnel and try to make every day great!!
