Time for a Blog Party!!!

Welcome to my blog!! This is the second time I join the Ultimate Blog Party.  I loved being part of it last year, so I’m back for more.
I’m so happy you stopped by my little crazy place full of family stories, plans, thoughts and lots of talk about random products and topics.  I am an obsessed Disney fanatic, but I mostly talk about my life with my hubby and kids.  I started this blog in January of 2011, as something to do since I was unemployed.  It kept my mind busy and I thought would help my writing skills.  After 2 years – I’m still here.  I don’t post as much as I’d like but I really try to get a post at least once a week.
I’ve been married to my high school sweetheart for 17 years – this June will be 18!  We’ve had great times and bad times, but it’s just brought us closer.  We have 2 wonderful, pain in the butt children who really keep us going.  Our schedules, no, our LIVES revolve around them…..LOL!  We plan vacations and short car trips or getaways around their schedule.  My son is 14 and plays both high school and travel baseball.  He’s been playing since he was 4 and loves it!  My daughter is 7, but equally as busy since she takes dance, gymnastics and ice skating.  Actually, she finished gymnastics for the year – we decided she’s too busy with dance right now so gymnastics may start up again in September.  Ice skating is also coming to an end for a while.  We are concentrating on dance this Spring since there is a lot going on, which I will be writing about in the coming weeks.
So this is pretty much it – I live to enjoy my family and life and I really try to enjoy everyday of my life.  Life can be difficult and we all encounter rough patches, but you need to always look for the light at the end of the tunnel and try to make every day great!!

Taking a Detour!!!!

So we are up & out of my dad's house by 7am.  It was hard and I tried to leave quickly, my poor baby girl even cried-I felt soooo bad for her.  Usually I'm the only one crying, but she really didn't want to leave :(  So,  we said goodbye-hope to be back soon (permanently) and we drove off!
About an hour out, we stopped for breakfast and had to practically make a run for it, LOL! There were like 20 buses full of kids!! By the time we got inside, the Dunkin Doughnuts line was like a mile long-ugh, there goes my coffee!  So we had no other choice but to eat burgers at Wendy's, everything else had super long lines that we didn't want to wait on!
We grabbed our burgers and left.  A little while later Laz asks me if I want to stop at Clearwater Aquarium.  At this point, I'm not 100% sure-I was sad about leaving & felt like just being home to calculate & come up with good, concrete reasons to move to Florida.  On the other hand, I really wasn't looking…

Weekend Trip to Niagara Falls, Canada~Part 2

Here is our 2nd day in Niagara Falls.  We started our morning with breakfast in the hotel restaurant.  After breakfast we headed over to Marineland.  This park was nothing spectacular, but it was a nice little trip.  We saw a dolphin show, saw several other animals, killer whales, fed Beluga whales and rode 1 or 2 rides.  Again, nothing spectacular but it was fun.  A lot of walking, and our favorite part was feeding the beluga whales - they were so cute!
The dolphin show was also fun!  Its been a long time since we've seen dolphins in action.














After all the walking, we were run down and hungry.  We headed back to the hotel to shower and prepare for our dinner at Massimmo's Italian restaurant.  The view was beautiful!  I enjoyed dinner, but hubby and baby girl didn't.  I like to try new things and unfortunately the other 2 don't - and there wasn't much on the menu that they liked.  Baby girl had Ceasar Salad, hubby had Minestrone soup and I had Linguine Carbonara.


Cooking Corner: Cookbook Challenge Day 1

Hi everyone!  I'm starting April with a little challenge for myself.  You are all welcome to join if you choose.  I have a rather large collection of recipes that I've never tried and since I started to declutter my life of things I don't need, this is one area that needs help. What do I need so many cookbooks and binders of recipes for? I don't know - it just takes up space and it's another thing for me to clean.  So, I decided that if I can't find good recipes that we love, there is no point in keeping the book or recipe.  I attempted this challenge a few years ago but never followed through.  This time, I intend to stick with it.
Here's my challenge:
Pick a book a month and try some recipes.
Decide what we like and what we don't.
If I have at least 15 recipes that we like, the book stays.  If not, I'll just copy the few recipes we liked and get rid of the book.
Not sure what I'll do with the book yet.  I'll figure it out at the end of th…
