The Happiest Place in the World

Finally, the morning I've been waiting for.  I woke without a problem, lol, got everyone up - had a few grumpy children which I ignored, made breakfast and we were out the door!

We missed the opening ceremony but still arrived as they opened.....

I've never been here when its been decorated for Halloween, but I loved it!!

1st stop had to be, without question, the Seven Dwarfs Mine Train...

The wait was about 30-40 minutes long but it was worth it and I'm so glad we made this our first choice.  The lines for this ride were hours long as the day went on.

After the mine train, we continued on through Fantasyland.  Its so beautiful here, my only regret is not being able to eat at Be Our Guest - but its at the top of my list for next time!

Heading Under the Sea.....

Storybook Circus was great - got some rides in, played in the water and met some Disney Friends!

After all the fun with Minnie, Daisy, Donald & Goofy was over, it was time for some shopping and snacks....

boy were there snacks.....

3 Icees, 2 chocolate/candy apples & cotton candy in hand we kept going....
But first, a picture with King Triton!

I always stop for a minute to enjoy this fountain....Love it!!!

Another must on every trip - checking out the Christmas store....

Now the time has come to go visit some ghosts....

Now we head over to Frontierland and Adventureland

Splash Mountain...

and down we go................

After this little adventure, its time for Thunder Mountain

Ok, that was a blast.  Next up - a pirate ride

Lunch time at Pecos Bill Cafe

and another ride to Splash Mountain....

A little rain slowed us down but we headed into Buzz Lightyear's Ranger Spin.

After this we went on Stitch's Great Escape, which we all enjoy except for the foul stench of his burp - yuck!!
Afterwards, the rain really came down and we made a mad dash for the exit. We went back to the resort to eat and relax, hoping the rain would go away so we can return for the parade & fireworks!

And it DID!!! YAY - the night wasn't ruined.

Great show, and I love capturing it in pictures.  Still learning to photograph fireworks - I'll get there.  Hoping next time they come out better, even though I'm happy with the ones I took this time around.

We took a few more pictures, watched the Electrical parade and called it a night!

I think we all knocked out as soon as we got back to our room.

Taking a Detour!!!!

So we are up & out of my dad's house by 7am.  It was hard and I tried to leave quickly, my poor baby girl even cried-I felt soooo bad for her.  Usually I'm the only one crying, but she really didn't want to leave :(  So,  we said goodbye-hope to be back soon (permanently) and we drove off!
About an hour out, we stopped for breakfast and had to practically make a run for it, LOL! There were like 20 buses full of kids!! By the time we got inside, the Dunkin Doughnuts line was like a mile long-ugh, there goes my coffee!  So we had no other choice but to eat burgers at Wendy's, everything else had super long lines that we didn't want to wait on!
We grabbed our burgers and left.  A little while later Laz asks me if I want to stop at Clearwater Aquarium.  At this point, I'm not 100% sure-I was sad about leaving & felt like just being home to calculate & come up with good, concrete reasons to move to Florida.  On the other hand, I really wasn't looking…

Weekend Trip to Niagara Falls, Canada~Part 2

Here is our 2nd day in Niagara Falls.  We started our morning with breakfast in the hotel restaurant.  After breakfast we headed over to Marineland.  This park was nothing spectacular, but it was a nice little trip.  We saw a dolphin show, saw several other animals, killer whales, fed Beluga whales and rode 1 or 2 rides.  Again, nothing spectacular but it was fun.  A lot of walking, and our favorite part was feeding the beluga whales - they were so cute!
The dolphin show was also fun!  Its been a long time since we've seen dolphins in action.

After all the walking, we were run down and hungry.  We headed back to the hotel to shower and prepare for our dinner at Massimmo's Italian restaurant.  The view was beautiful!  I enjoyed dinner, but hubby and baby girl didn't.  I like to try new things and unfortunately the other 2 don't - and there wasn't much on the menu that they liked.  Baby girl had Ceasar Salad, hubby had Minestrone soup and I had Linguine Carbonara.

Cooking Corner: Cookbook Challenge Day 1

Hi everyone!  I'm starting April with a little challenge for myself.  You are all welcome to join if you choose.  I have a rather large collection of recipes that I've never tried and since I started to declutter my life of things I don't need, this is one area that needs help. What do I need so many cookbooks and binders of recipes for? I don't know - it just takes up space and it's another thing for me to clean.  So, I decided that if I can't find good recipes that we love, there is no point in keeping the book or recipe.  I attempted this challenge a few years ago but never followed through.  This time, I intend to stick with it.
Here's my challenge:
Pick a book a month and try some recipes.
Decide what we like and what we don't.
If I have at least 15 recipes that we like, the book stays.  If not, I'll just copy the few recipes we liked and get rid of the book.
