Time to go Home ---- well, maybe not!

After the boat trip we had one last dinner with the family.  I had made up a story to tell the kids that we had to start heading home early - nobody was happy!  Me & hubby knew what was coming but we wanted to surprise everyone, so they can be sad & mad for one night - they'll get over it....hehehe!!

The next morning we were in the car by 6am and ready to head out.  It took us less than 3 hours to get to Orlando.  First stop was checking in to our hotel - Holiday Inn Orlando Orange Lake Resort.  The kids really didn't know where we were going, as far as they knew I had the brilliant idea to stop for the night at this resort and go check out a college....LOL!  My son was not happy because this is not what he wants to do on vacation!  So I finish checking in and leave all of our luggage at the resort and we move on to our first stop.

ANIMAL KINGDOM!!! I don't think anyone really realized where we were and I honestly was a bit upset that we didn't get the reaction we were expecting.  We thought these kids would be jumping for joy when they realized where we were.  The only one that was really happy was my baby girl -- she was so surprised!! When we made it in the park, One of my nieces, the 13 year old, thanked hubby once she realized where we were - the other one, my nephew who is 10, still didn't fully know where he was.  He knew it was a theme park but had no clue this was part of Disney - he came to find out we were at Disney the next day....LOL.  My 16 year old niece didn't seem to thrilled, she was happy I guess, but I know she would've rather been back home already - I think she really missed her boyfriend, ugh....teenagers!!!

Anyway, we moved on, ignored the long faces and went on to enjoy our day - 1st stop....Dinoland U.S.A.

Now it was time for lunch....we were all kind of hungry

I had a fruit platter, it was good, filling and refreshing

Baby girl also opted for fruit....

Now we are going on a jungle trek.....

My 16 yr old was not amused :/

BATS!!! This is the only place I enjoy seeing them.....

Next up is my favorite ride in all of Animal Kingdom!!!

We took a break from walking at Flights of Wonder.....I love this show and I even caught my son laughing.....FINALLY a smile!!! Too bad I couldn't capture it in a me, I tried.

This gorilla wanted nothing to do with us humans, at one point he/she even banged on the glass and walked away......

Oh - time for the 2 week safari.....

Now its time to go-everyone is hungry & cranky, although I can't understand how anyone would be cranky here, but hey - they can't all be like me! LOL

Now we are off to the grocery store and then to get unpacked at our home for the next few days.....

Taking a Detour!!!!

So we are up & out of my dad's house by 7am.  It was hard and I tried to leave quickly, my poor baby girl even cried-I felt soooo bad for her.  Usually I'm the only one crying, but she really didn't want to leave :(  So,  we said goodbye-hope to be back soon (permanently) and we drove off!
About an hour out, we stopped for breakfast and had to practically make a run for it, LOL! There were like 20 buses full of kids!! By the time we got inside, the Dunkin Doughnuts line was like a mile long-ugh, there goes my coffee!  So we had no other choice but to eat burgers at Wendy's, everything else had super long lines that we didn't want to wait on!
We grabbed our burgers and left.  A little while later Laz asks me if I want to stop at Clearwater Aquarium.  At this point, I'm not 100% sure-I was sad about leaving & felt like just being home to calculate & come up with good, concrete reasons to move to Florida.  On the other hand, I really wasn't looking…

Weekend Trip to Niagara Falls, Canada~Part 2

Here is our 2nd day in Niagara Falls.  We started our morning with breakfast in the hotel restaurant.  After breakfast we headed over to Marineland.  This park was nothing spectacular, but it was a nice little trip.  We saw a dolphin show, saw several other animals, killer whales, fed Beluga whales and rode 1 or 2 rides.  Again, nothing spectacular but it was fun.  A lot of walking, and our favorite part was feeding the beluga whales - they were so cute!
The dolphin show was also fun!  Its been a long time since we've seen dolphins in action.

After all the walking, we were run down and hungry.  We headed back to the hotel to shower and prepare for our dinner at Massimmo's Italian restaurant.  The view was beautiful!  I enjoyed dinner, but hubby and baby girl didn't.  I like to try new things and unfortunately the other 2 don't - and there wasn't much on the menu that they liked.  Baby girl had Ceasar Salad, hubby had Minestrone soup and I had Linguine Carbonara.

Cooking Corner: Cookbook Challenge Day 1

Hi everyone!  I'm starting April with a little challenge for myself.  You are all welcome to join if you choose.  I have a rather large collection of recipes that I've never tried and since I started to declutter my life of things I don't need, this is one area that needs help. What do I need so many cookbooks and binders of recipes for? I don't know - it just takes up space and it's another thing for me to clean.  So, I decided that if I can't find good recipes that we love, there is no point in keeping the book or recipe.  I attempted this challenge a few years ago but never followed through.  This time, I intend to stick with it.
Here's my challenge:
Pick a book a month and try some recipes.
Decide what we like and what we don't.
If I have at least 15 recipes that we like, the book stays.  If not, I'll just copy the few recipes we liked and get rid of the book.
