Sunday Dinner (Old favorite) ~Cooking Corner

I planned on doing another new recipe today to continue my cookbook challenge, but since we just got back from Atlantic City, I wasn't ready to do something new.  I already had a lot to do with putting away the Christmas tree and decorations.  So I went for a classic - Chicken parm and spaghetti.

This is so easy and quick to put together. My daughter loves doing the breading of the chicken herself, which is a great help to me.


In the meantime, I heat up the oil to fry the chicken and preheat the oven at 350 degrees





Once fried, I place them on a sheet pan


Add tomato sauce and put in the oven for 15 minutes


After 15 minutes, I add a slice of mozzarella cheese on top of each piece


While the chicken is in the oven, I put some water to boil.  Once it is boiling, I add the spaghetti.


While all of the above is cooking, I put together my quick version of a Caprese Salad.


I use dried crushed basil when I don't have fresh basil


After the 10-15 minutes, the spaghetti is ready so I drain it, then add tomato sauce to the pot and put the spaghetti back in to mix.


Chicken is ready to be placed on a platter


and voila! Sunday dinner is ready in less than an hour.
